Preheat the oven to 425°F. Remove beef from package and place in a medium size roasting pan. Place in the oven, uncovered, for 1 hour. Remove from the oven and add ½ inch of water to fill the bottom of the roasting pan. Lower the oven to 300°F, cover pan tightly and continue to cook for 2 hours, or until the internal temperature reaches 195°F as measured with a food thermometer. Carefully remove brisket to platter. After letting the brisket rest for 20-30 minutes, slice meat thinly across the grain.
Remove beef from package and place in a 4-8 quart slow cooker. Add one cup of water. Cook on low for approximately 8-10 hours or on high for 4-6 hours. Verify the internal temperature reaches 195'F as measured with a food thermometer. Carefully remove brisket to platter. After letting the brisket rest for 20-30 minutes, slice meat thinly across the grain.
